US vs. The Zucchini


OK, I am finding that Zucchini has potential to be the enemy. I walk into my kitchen and there it is over taking the counter as if it is a disease. These are not just small non-threatening zucc's, but gigantnormous zucchinis that should have names because they are so big. Pre-Garden, I never knew that a zuccs could get so big! Well, Dane (MY HERO) came to my rescue and took control back in my kitchen. On Saturday, Dane cut, freezer packed, and single handedly froze the zuccs. Up until this point, I wasn't quite sure what to do with all of these zucchini, but to give them away. It was my neighbor, Suzy, who also came to my rescue with a really great recipe. So, for all of you that have fallen victims to the overwhelming gigantnormous zucchini that your "friendly neighbor" just wanted to share with you, I am here to save you with a delicious recipe that will be liked by everyone over the age of 2.

Zucchini Pepperoni Casserole

4 eggs, beaten
1/2 Cup oil
1 cup chopped pepperoni
3 cup cubed zucchini (the enemy)
2 small cans drained mushrooms
1/2 cup chopped green pepper
1/2 tsp. parsley
1/2 tsp. oregano
1 T. onion slat
1/3 tsp. garlic salt
1/3 tsp. pepper
1/2 Cup Parmesan cheese
1 Cup Bisquick

Mix it all together. Pour into baking dish, 9 X 13. Bake 35-40 min in a 350 degree oven.

Piece of cake and delicious!
Never again will zucchini be the enemy. Next step, Zucchini bread.

As a side note, Dane also dealt with the non-threatening tomato that tries to attack 20 to 50 at a time. He initiated the canning process and we canned 7 quarts of italian style stewed tomatos. I think next year we'll cut back to 1 zuc plant and only a few tomato plants instead of 4 zuccs and 16 toms.

Maybe I'll be up for a vegetable garden next year...
So, after Nehemiah and I had WWIII last night at dinner with no improvment- he was almost the perfect little eater this morning. I guess I just have to not always expect immediate results- especially with eatin.
